Pumpkin blended chia pudding

Ingredients
  

  • 1 tsp Flax seed
  • ½ cup pumpkin puree
  • ¼ cup chia seeds
  • 1/2 cup dairy-free coconut cream
  • 2 tbsp cashew butter
  • 2-3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1-2 tsp pumpkin pie spice
  • 1 scoop Protein or collagen powder , (optional)

Instructions
 

  • Blend the Wet Base: Combine the pumpkin puree, dairy-free coconut cream, cashew butter,protein powder if using. maple syrup, vanilla extract, and pumpkin pie spice in a high-speed blender. Blend until completely smooth and creamy.
  • Add Chia Seeds: Add the chia seeds into the blender and pulse a few times. You want the seeds incorporated, just enough to jumpstart the thickening and create a smooth base. (Alternatively, pour the blended mixture into a bowl and stir the chia seeds in by hand).
  • Chill: Pour into your jar or glass and refrigerate for at least 2 hours until set. Because it’s blended, it will set into an amazingly smooth, pudding-like texture with zero seed texture.
  • Layer & Serve: Layer with your favorite grain-free granola or pecans.
