Single Serve Cinnamon Sugar Donut (Grain-Free)

Ingredients
  

  • 1/2 – 1 tbsp coconut flour, start with 1/2 tbsp, add more if batter is too thin
  • 2 tbsp tapioca starch
  • 1/4 cup almond flour
  • 1/4 tsp baking powder
  • 3 tbsp maple syrup
  • 1 tbsp full-fat coconut milk, or yogurt
  • 1 tbsp avocado or coconut oil, melted
  • 1 tbsp whisked egg
  • 1 tsp vanilla extract

For the coating:

  • 1 tbsp coconut sugar, or organic cane sugar
  • 1/4 tsp ground cinnamon
  • 1/2 tbsp melted coconut oil or butter

Instructions
 

Step 1: Mix the Batter

  • Preheat oven to 350°F (if baking).
  • In a small bowl, whisk together almond flour, tapioca flour, coconut sugar, cinnamon, baking soda, and salt.
  • Stir in the whisked egg, coconut milk, melted coconut oil, and vanilla until a smooth batter forms.

Step 2: Bake or Microwave

  • Oven: Lightly grease a single cavity of a donut pan (or ramekin). Pour in the batter and bake for 12–14 minutes, until golden and set.
  • Microwave: Grease a microwave-safe ramekin, pour in the batter, and microwave on high for 90–120 seconds, until cooked through.

Step 3: Coat in Cinnamon Sugar

  • Mix the coconut sugar and cinnamon in a shallow dish.
  • Brush or roll the warm donut with melted coconut oil.
