- 2 tbsp tapioca starch
- 1/4 cup almond flour
- 1/4 tsp baking powder
- 3 tbsp maple syrup
- 1 tbsp full-fat coconut milk, or yogurt
- 1 tbsp avocado or coconut oil, melted
- 1 tbsp whisked egg
- 1 tsp vanilla extract
For the coating:
- 1 tbsp coconut sugar, or organic cane sugar
- 1/4 tsp ground cinnamon
- 1/2 tbsp melted coconut oil or butter
Instructions
Step 1: Mix the Batter
- Preheat oven to 350°F (if baking).
- In a small bowl, whisk together almond flour, tapioca flour, coconut sugar, cinnamon, baking soda, and salt.
- Stir in the whisked egg, coconut milk, melted coconut oil, and vanilla until a smooth batter forms.
Step 2: Bake or Microwave
