For the Cookie Dough Layer:
- 1.5 cup almond flour
- 1/3 cup tapioca starch
- Dash of salt
- 1/2 teaspoon almond extract
- 1 teaspoon vanilla extract
- 3 tbsp softened refined coconut oil, butter, or non-hydrogenated palm oil shortening (measured solid)
- 1/4 cup maple syrup, or any sticky sweetener
- 2 tbsp coconut milk, full fat
- 1/3 c Raw cane sugar, (optional: pulse in blender to make more powder consistency)
- 2/3 cup rainbow sprinkles
For the Ice Cream Layer:
- 1 pint vanilla ice cream of choice, vegan and gluten-free
Instructions
Step 1: Prepare the Cookie Dough
- In a large bowl, mix the almond flour and tapioca starch together. Add a dash of salt for balance.
- Stir in the almond extract, vanilla extract, softened coconut oil, maple syrup, and granulated sweetener. Mix by hand or with a mixer on low speed until well combined.
- Fold in the rainbow sprinkles to add that funfetti magic.
Step 2: Shape the Cookie Dough Layers
- Divide the dough in half.
- Line an 8×8-inch pan with parchment paper, ensuring it covers all sides and the bottom.
- Press one half of the dough into the prepared pan, creating an even layer. Cover this layer with another piece of parchment paper.
- Press the second half of the dough on top of the parchment paper, ensuring it’s evenly spread out. You’ll now have two layers of cookie dough separated by parchment paper.
- Freeze the pan for about 2 hours until the dough is firm.
Step 3: Prepare the Ice Cream Layer
- Set the ice cream out at room temperature until it reaches a soft, spreadable consistency.
- Once the ice cream is soft, remove the pan from the freezer. Take off the top cookie dough layer and set it aside.
- Spread and smooth the softened ice cream over the bottom cookie dough layer in the pan.
Step 4: Assemble the Sandwiches
- Place the second cookie dough layer on top of the ice cream, gently pressing down to form a sandwich.
- Cover the pan again and freeze for an additional 3-4 hours until the ice cream is firm.
Step 5: Serve and Enjoy!
- Once fully frozen, remove the pan from the freezer. Lift the parchment paper to remove the entire cookie dough ice cream sandwich block.
- Cut into bars or squares of your desired size.
