When you’re craving a blondie but don’t want to bake an entire batch, this single-serve recipe has you covered. It’s soft, gooey, and packed with the perfect balance of sweetness and chocolate. Made with wholesome ingredients, this quick treat is ready in minutes!
Servings 1

Ingredients
  

  • 3 tbsp almond flour
  • 2 tbsp tapioca or arrowroot starch
  • 2-3 tbsp coconut or brown sugar, (to taste)
  • Splash of vanilla extract
  • 3-4 Tbsp chocolate chips
  • 1 tbsp Of an egg (whisked thoroughly)
  • 1 tbsp refined coconut oil, (melted)

Instructions
 

Prep Your Dish

  • Preheat your oven to 350°F (175°C). Lightly grease a small ramekin or oven-safe dish with a bit of coconut oil. Alternatively, use a microwave-safe dish if you’re short on time and want to cook it in the microwave.

Mix the Wet Ingredients

  • In a small bowl, melt and combine the coconut or raw cane sugar, vanilla extract, tbsp of egg.. Mix well until smooth.

Add the Dry Ingredients

  • Add the almond flour and tapioca starch to the bowl, stirring until a thick dough like batter forms.

Fold in the Chocolate Chips

  • Gently fold in a handful of chocolate chips for those irresistible melty pockets of goodness.

Bake or Microwave

  • Oven Method: Transfer the batter to your prepared ramekin. Bake for 10-12 minutes or until the edges are set and the center is slightly soft.k
  • Microwave Method: Cook on high for 45-60 seconds, checking at intervals to ensure it doesn’t overcook.

Cool Slightly & Enjoy
