  • Apple filling:
  • ½ small apple, about ⅓ cup diced
  • 1 tbsp coconut sugar
  • 1 tsp Lemon juice
  • ¼ tsp cinnamon
  • Batter:
  • 1/4 tbsp cup almond flour
  • 2 tbsp tapioca flour
  • 1 tbsp coconut flour
  • 3 tbsp coconut sugar
  • 1 tbsp melted refined coconut oil or avocado oil
  • 1 tbsp coconut milk, or dairy free milk of choice
  • 1 tbsp whisked egg, (make sure it is very thoroughly whisked)
  • ½ tsp vanilla extract
  • Pinch of salt
  • ½ tsp cinnamon
  • Optional glaze:
  • 2 tbsp powdered sugar + ½ tsp milk, or softened coconut butter for refined sugar-free

Instructions
 

  • Microwave apples → In a microwave-safe bowl, toss diced apple with coconut sugar, coconut oil, and cinnamon. Microwave 45–60 seconds until softened and caramelized.
  • Make batter : In a small bowl, whisk almond flour, tapioca flour, coconut flour, coconut sugar, cinnamon, and salt. Stir in melted oil, 1 tbsp coconut milk, vanilla, and whisked egg until thick and sticky.
  • Fold in apples: Gently stir the softened apples into the batter. Batter should be pretty thick, or it will spread. Optional: chill the batter for 10-15 minutes if you want the fritter to stand taller.
  • Spoon batter on baking sheet , keeping it mounded tall.
  • Bake at 365°F (185°C) for 15 minutes (standard oven) or 350°F convection for 12–15 minutes, until puffed, golden, and set in the center.
  • Finish : Drizzle with glaze or dust with powdered sugar. Serve warm!
