Microwave apples → In a microwave-safe bowl, toss diced apple with coconut sugar, coconut oil, and cinnamon. Microwave 45–60 seconds until softened and caramelized.
Make batter : In a small bowl, whisk almond flour, tapioca flour, coconut flour, coconut sugar, cinnamon, and salt. Stir in melted oil, 1 tbsp coconut milk, vanilla, and whisked egg until thick and sticky.
Fold in apples: Gently stir the softened apples into the batter. Batter should be pretty thick, or it will spread. Optional: chill the batter for 10-15 minutes if you want the fritter to stand taller.
Spoon batter on baking sheet , keeping it mounded tall.
Bake at 365°F (185°C) for 15 minutes (standard oven) or 350°F convection for 12–15 minutes, until puffed, golden, and set in the center.
Finish : Drizzle with glaze or dust with powdered sugar. Serve warm!
