Mini rice paper mochi donuts

An easy and satisfying gluten free treat—- using rice paper sheets and an egg mixture in a donut maker!

Equipment

  • Electric donut maker

Ingredients
  

  • 2 Eggs, plus 1 yolk
  • 1/4 cup Maple or coconut Sugar, for a lovely, subtle sweetness
  • 3/4 cup Milk, Full fat coconut milk, but flax or almond milk works too!
  • 1 tsp Vanilla Extract
  • 6 Rice Paper Sheets
  • Dusting Paleo or regular powdered sugar

Instructions
 

  • Whisk the Base: In a shallow bowl, whisk together your eggs, maple sugar, milk of choice, and vanilla extract until smooth.
  • Dip & Shape: Briefly dip a sheet of rice paper into the liquid mixture until it becomes pliable. Carefully roll or fold the rice paper into a ring shape.
  • Grill: Place your shaped rings into your preheated donut maker. Close the lid and grill until they are a beautiful, light golden color.
  • Serve: These are best enjoyed warm! You can keep them simple or add a light dusting of powdered sugar.

Notes

don’t have a donut maker? You could bake these in the oven in a silicone donut mold
