Mini rice paper mochi donuts
An easy and satisfying gluten free treat—- using rice paper sheets and an egg mixture in a donut maker!
- 2 Eggs, plus 1 yolk
- 1/4 cup Maple or coconut Sugar, for a lovely, subtle sweetness
- 3/4 cup Milk, Full fat coconut milk, but flax or almond milk works too!
- 1 tsp Vanilla Extract
- 6 Rice Paper Sheets
- Dusting Paleo or regular powdered sugar
Whisk the Base: In a shallow bowl, whisk together your eggs, maple sugar, milk of choice, and vanilla extract until smooth.
Dip & Shape: Briefly dip a sheet of rice paper into the liquid mixture until it becomes pliable. Carefully roll or fold the rice paper into a ring shape.
Grill: Place your shaped rings into your preheated donut maker. Close the lid and grill until they are a beautiful, light golden color.
Serve: These are best enjoyed warm! You can keep them simple or add a light dusting of powdered sugar.
